Step 1: Gravy base
1/2 cup ghee or butter
1 medium size onion
6-8 garlic cloves
2 tsp white poppy seeds
10 whole cashews
Step 2: Spices
4-6 whole Indian or Thai green chilies
1/4 tsp ground mace
1 tsp whole peppercorns
5-8 whole cardamoms
3 dried bay leaves
Step 3: Chicken
1/4 cup whipped sour cream
1 tsp salt
2 lb boneless, skinless chicken thighs, washed and cut into pieces
Cooking Instructions

Heat the ghee and blend all else from Step 1. Fry the blend in ghee until the oil starts to separate.

Add spices from Step 2 and fry for 2 or 3 minutes.

Add all from Step 3 and 1 cup of hot water to the mixture. Stir well until everything blends together. Cover put when it comes back to a boil and simmer for 20 minutes or until the oil separates and a thick gravy starts to sizzle. At this stage, add another cup of boiling water, stir and simmer with lid on for 5 minutes. Turn off stove. Chicken korma is ready!
