Dough:
1/2 teaspoon active dry yeast (Saf Instant)
3/4 cup warm water (45 degrees C)
2 1/4 cups flour
1 tablespoons olive oil + more
1 teaspoon salt
Base:
Pizza Sauce (American Garden) - 2 table spoon
Mozarella cheese - 100g grated
Kissan/Cheddar Cheese - 100g grated
Coreander leaves (or oregano)
Toppings:
One small eggplant, peeled and sliced, with salt and pepper/paprika
2 sausages, or chicken/beef chunks
1 capsicum or 2 green chilies
8 mushrooms, Olive - optional
Procedure:
- Sift flour into a bowl. Add yeast and salt and sprinkle the olive oil. Stir to combine.
- Make a well in the centre. Add water as required and mix to form a soft dough. Knead dough until smooth, adding more flour by tablespoonfuls if dough is very sticky, about 1 minute.
- Place dough in a lightly greased bowl and cover it. Stand in a warm draft-free place for 45 minutes to 1 hour or until dough has doubled in size.
- Punch dough down and turn out onto a well floured surface. Stretch the dough into a 5- or 6-inch round disc, using your palm or a rolling pin.
- Stretch the dough to the required size by turning the dough while pulling at the edges, stretching at the edges, flapping across hands, or by placing the disc on the back of your floured hands letting the weight of the dough pull the dough thinner.
- Grease pan with olive oil and dust with flour/semolina generously. Transfer the rolled out dough into the pan and let it rest for 15 minutes or so.
- In the mean time, preheat oven to 180C and prepare the toppings. Mix the two grated cheesed together with some olive oil, salt and pepper.
- Apply the pizza sauce evenly on the dough. Throw a little of the cheese mixture to get the toppings to stick.
- Add toppings and finish with cheese on the top.
- Bake until the cheese is golden brown, usually 12 to 18 minutes.
Notes
You can freeze individual portions of dough after it has risen. Dust well with flour, double wrap and refrigerate for a day or freeze for up to 3 months. Thaw in fridge overnight before using.
