Crust:
1 1/2 cups finely ground graham cracker crumbs (approx 30 ct, 4 oz)
4 tablespoons butter, melted
1/2 teaspoon ground cinnamon
Or: 1 (9 inch) prepared shortbread pie crust
Cake:
2 (8 ounce) packages cream cheese
1 cup white sugar
1 cup sour cream
2 eggs Eggs Large White
2 teaspoons vanilla extract
Mix graham cracker crumbs, sugar, melted butter or margarine, and cinnamon until well blended . Press mixture into an 8 or 9 inch pie plate. Chill for about 1 hour.
Preheat oven to 450 degrees F.
Beat the cheese until it is soft. Mix in sugar. Add eggs one at time, blending well. Add vanilla and sour cream. Pour into crusted pan.
Bake for 15 minutes at 450 then reduce the oven temp to 250-275 and bake for like another 45 min until cake jiggles evenly across the top when lightly shaken.
Then turn the oven off and run a knife around the outside edge. Leave the cake in the oven and let it cool in there for an hour or so. Then place in refrigerator overnight.
