Ingredients
Marinade:Beef 1 kg , cut in small pieces
Salt: 1 TbSp
Cayenne (Chili) powder: 1 tsp
Coriander powder: : 1 tsp
Garam masala: 1 TbSpYogurt: 1/2+ cup
Ginger paste 2 TbSp
Garlic paste 2 TbSp
Beef cooking:
Mace + Nutmeg : 1 tsp
Clove : 1 tsp
Bay leaf: 4
Cinnamon : 5 pcs
Cardamom: 4
Onion -1 diced
Cumin powder : 1 tsp
Green Chili whole - 8 -20 pcs
Kewra water - 1 tsp
Rice:
Bay Leaf : 3
Cinnamon : 3
Cardamom: 3(pierced)
Whole cumin : 1/2 tsp
Basmati : 3 cups
Ginger paste : 1 TbSp
Garlic paste : 1 TbSp
Steps:
Marinade beef in yogurt with spices (Salt to garlic paste) for 1 hour.
Heat mustard oil and fry whole spices (Mace...cardamom) until fragrant.
Add onion and fry until light brown.
Add beef on high heat. Fry for 5 mins.
Add 1/2 cup water and cook covered on medium heat until water is dry (about 20 mins).
Prepare rice:
Heat oil (not mustard).
Add bay leaf, cinnamon and cardamom and fry until fragrant.Add whole cumin. Add rice and then ginger garlic paste. Fry for 5-7 minutes until dry and nutty.
Spread cumin powder on beef.
Spread rice over cooked beef.
Spread 1 cup milk.
Spread 2.5 cups boiling water.
Cook covered on very low heat until rice is almost cooked (about 15 mins).
Add 8 whole green chillies (press at stem end to prevent bloating)
Spread a few drops of Kewra water and keep covered for 5 more minutes.
Mix the rice with the beef carefully.
